Bamboo salt, also known as jukyeom in Korean, is a natural salt that is produced through a traditional method of salt farming using bamboo pipes and solar evaporation. Bamboo salt originates from a small village located on the western coast of South Korea. The village is situated on a flat terrain surrounded by hills on three sides with the open sea on the other. This unique geography allows the sea breeze and sunlight to naturally vaporize the seawater that is slowly drawn through bamboo pipes inserted in the coastal mudflats. Over several months, the water evaporates, leaving behind pure salt crystals in thepipes. The villagers then handcollect these salt crystals to be used as a finishing salt. Compared to conventional salt mining techniques, bamboo salt farming is an eco-friendly process that utilizes natural energy sources like sunlight, wind, and tidal movements for evaporation rather than machinery.

Composition and Properties of Bamboo Salt

Bamboo Salt is a pure sea salt composed of sodium chloride along with trace amounts of various minerals from seawater like magnesium, calcium and iron. Due to its organic production method, bamboo salt retains up to 84 different minerals found in seawater compared to typical table salt which consists almost entirely of sodium chloride. These additional volcanic ash-derived minerals give bamboo salt its unique flavor profile reminiscent of the sea in addition to various health benefits. Studies have shown bamboo salt contains over double the calcium and magnesium content of regular salt. It has a subtle sweet taste rather than a strong salty flavor like iodized salt since it naturally contains less sodium. Its large grain size also means it dissolves slowly in the mouth, allowing one to better control sodium intake.
